Millet and tofu patties with yoghurt dip

Millet has long been cherished in Polish kitchens, and for good reason. Embracing a variety of whole grains is a wonderful way to nourish your body, yet many people limit themselves to wheat, rice, and oats. I encourage you to explore beyond the familiar and discover the beauty of different grains.

Millet is a perfect place to start—affordable, easy to prepare, and incredibly versatile. It cooks quickly and has a delicate texture that makes it an excellent binder, ideal for creating delicious veggie patties and burgers. Whether in sweet or savory dishes, millet brings warmth and nourishment to every meal.

Here, I’ve shaped it into golden, wholesome patties, served alongside vibrant vegetables and a creamy soy yogurt dip. A simple yet satisfying way to enjoy this underrated grain.

Patties ingredients

half red onion, chopped 2 garlic cloves, minced 2 shredded carrots 1 tbsp extra virgin olive oil (optional)

1,5 cups cooked millet 2 tbsps chopped parsley three quarters cup silken tofu 1 tsp medium curry powder 1tsp cumin 1 tsp smoked paprika 1 tbsp coconut aminos or tamari salt and pepper to taste

2 tbsp polenta

Method

Sauté the shredded carrots, onion, and garlic over medium heat until they soften and become fragrant. Transfer them to a mixing bowl, then add the remaining ingredients. Mix everything thoroughly until you achieve a smooth, well-combined consistency.

Shape the mixture into patties and coat them in polenta for a lovely crisp texture—you can also use breadcrumbs if you prefer. Cook the patties in the air fryer or oven until they turn beautifully golden and crispy. I air-fry mine at 200°C for about 18 minutes for the perfect crunch.

Creamy yoghurt dip ingredients

1 cup soya yoghurt- plain (I use Sojade brand) half cucumber, finely chopped 4 radishes, finely chopped 2 tbsps chopped fresh dill 1 tbsp chopped capers squeeze of lemon salt and pepper

1 tsp black sesame seeds

Mix all the ingredients and sprinkle with sesame seeds.
